Finally, after a long winter, it's time to use the grill again! Hooray! We grill out many nights during the week, and sometimes adapt recipes to what we have on hand. One such recipe we have created is for cheesy poblano peppers. They are very easy to make. Enjoy!
Cheesy Poblano Peppers
2 poblano peppers
4 ounces processed white cheese
2 frozen pre-cooked sausage patties
Wash peppers, slice lengthwise to halve, and remove seeds. Place flat in microwave safe dish and cover with plastic wrap. Cook in microwave for 4 to 5 minutes, until soft. Line grill pan with aluminum foil. Place peppers in pan. Cook sausage in microwave for 1 1/2 minutes; blot with paper towels. Crumble and set aside. Cube cheese and place in microwave-safe dish to melt, stirring every minute until smooth. Spoon cheese into peppers, dividing evenly. Sprinkle sausage evenly over cheese. Grill 6 to 10 minutes, until warm. Serve immediately (rewarm in microwave if necessary). Serves 2 people as main dish; 4 people as a side dish.
